Jujube also called red dates and Chinese dates with many medicinal properties, is green and round at primarily and after reaching at the trees it becomes red and olive color and shaped. Its medium-sized trees could grow up to 40 feet with glossy green deciduous leaves and light gray bark. The oval-shaped, single-stoned fruit is green to start with and becomes dark brown over time. As one the largest producers of Jujube in the world, South Khorasan is the center of Jujube production in Iran.

Cultivation of Jujubes goes back to 9,000 BC in South East Asia and it has routes in their culture as well. Jujube tree tolerates fairly cold winters, surviving temperatures down to about −15 °C. Also In Muslim culture Jujube Tree refers to the enigmatic lote-trees from 7th layer of Heaven.
